Summer Grilling Tips & Recipes with Chef George Duran

Summer season is my favorite time of year to really get creative with my recipes. So let’s start off with these sweet and spicy spiral hot dogs (recipes below!) that I cooked on my Char-Broil TRU-Infrared gas grill. This grill gives everyone, regardless of their skill, the freedom to enjoy the entire grilling experience. It has an emitter plate that sits above the flames, preventing flare-ups so no more burnt hot dogs or hot and cold spots. Char-Broil TRU-Infrared disperses the heat evenly and that helps retain the flavors in your food which means juicier hot dogs, tastier burgers and the best foods you’ve ever grilled.

Speaking of tasty burgers, nothing says 4th of July like an amazing cheeseburger. And today I’ve made this Grand Cru Cheese Burger using the award winning Roth Grand Cru cheese. Let’s go from one amazing burger to another. Check out my Spicy Mango Slaw Burger (recipe below). I used Cholula hot sauce to add a ton of flavor and taste to the mango slaw without overpowering it. You see, while some people may be afraid that hot sauce is too hot, Cholula isn’t. It’s actually known for its flavorful taste. In fact, it’s what I call a flavor-forward hot sauce. And by the way, there are no artificial ingredients or preservatives. Just look for their iconic wooden cap!

Let’s not forget that your guests need some snacks before you grill. Pop Chips makes that easy because they’re never fried and always real. My favorite are the ones with deep ridges that give them big crunch and flavor like the Buffalo Ranch and the Cheddar Sour Cream. Or you can even try the classic chips in sea salt and bbq. Remember these guys have half the fat and fewer calories than traditional fried chips and have no artificial ingredients. Great for dipping, pairing with a sandwich!

Sweet and Spicy Spiral Hot Dogs

Hot Dogs
Hot Dog Buns

For Sweet and Spicy Sauce

½ C. White sugar
¼ C. White vinegar
2 Tblsp. Soy sauce
1 Tblsp. Sriracha Sauce
1 Tablespoon Ketchup
1 Tbslp. Corn starch

Equipment needed:

Long skewer
Paring knife


Make sauce by placing sugar, vinegar, soy sauce, Sriracha, ketchup and ½ cup water in a small sauce pan and whisking it occasionally as you bring it to a boil. In the meantime mix 1 tablespoon of cold water with corn starch. Once sauce begins to boil drizzle in corn starch mixture and mix vigorously. When the sauce thickens, turn off the heat and set aside to cool. You may make the sauce a day ahead and cover and refrigerate. Re-heat the sauce before using.

Preheat Char-Broil grill on medium heat.

Carefully push skewer through the hot dog all the way through. Take a paring knife and cut down the side of the hot dog as you spin the skewer right down the length of the hot dog. Remove the hotdog with your hand very gently. It should be in one long spiral piece.

Grill hot dog until edges are crispy. Once cooked, take each hot dog and generously brush them with the sweet and sour sauce. Serve in warm buns.

Spicy Mango Slaw

1 Tblsp. mayonnaise
2 Tblsp. sour cream
1 tsp. Cholula Original Hot Sauce
1 tsp. lime juice
1 pinch salt
1 C. finely chopped cabbage
3 large carrots, peeled and grated
1 mango, ripened but hard, peeled and chopped into matchsticks


Make slaw by mixing the first five ingredients until smooth and then mixing it with the cabbage, carrots and mango.

Serve on burgers and hotdogs.
